Sizzled over heat with olive oil this shrimp scampi is feeling the love of its Italian roots with garlic, zucchini and tomato. Less rooted in Italian essential cooking but welcome guests to this delectable dish are carrot and sweet potato. Scampi is widely loved throughout Europe where many of our local recipes hail from, give this a try and feel that home cooking of thousands of years of our European history.
