Carrots are rich in beta-carotene, which is converted into vitamin A in the liver. Vitamin A is transformed in the retina, to rhodopsin, a purple pigment necessary for night vision.
Tofu has lower levels of saturated fatty acids and higher levels of unsaturated fatty acids compared to meats such as beef. Tofu provides protein with little of the saturated fat and none of the moral indigestion that comes with meat.
