Yellow corn is a rich source of beta-carotene, which forms vitamin A in the body and is essential for the maintenance of good vision and skin.
Mushrooms are high in antioxidants, just like carrots, tomatoes, green and red peppers, pumpkins, green beans, zucchini, and other whole foods. Antioxidants are chemicals that get rid of free radicals, a type of chemical that can harm a person's body cells, potentially leading to cancer.
Corn is a rich source of antioxidants which fight cancer-causing free radicals. Unlike many other foods, cooking actually increases the number of usable antioxidants in sweet corn. It is a rich source of a phenolic compound called ferulic acid, an anti-carcinogenic agent that has been shown to be effective in fighting tumors that lead to breast and liver cancer.
Carrots are such a good diet food because they are low in calories. A cup of raw carrot has only 50 calories. On the other hand, boiled carrots are slightly higher, with 54 calories per cup. Carrots can promote satiety and decrease calorie intake in subsequent meals.
